DECORATED SWISS ROLL

Ingredients
Sponge Cake
Whipped Cream Filling

Instructions
  1. Put oven rack in middle position.preheat oven to 325F
  2. Sift flour and salt, set aside
  3. In a large bowl, cream eggyolks and 1/2 cup of the sugar until it is very creamy and the sugar has dissolved.
  4. Add milk and vanilla and mix completely.
  5. Add the sifted flour. Batter would be thick.
  6. In another bowl whip egg whites until foamy, add the remaining 1/4 cip of suagar.
  7. Whip until stiff and shiny but not dry.
  8. Fold in the meringue with the eggyolk mixture.
  9. Pour in the pan and gently even it out with a spatula.
  10. Bake for 10-12 min. It's not supposed to turn brown, so just watch out. If it feels like springing back when you touch it, it is done.
Whipped Cream Filling
  1. Whipped cream until stiff peaks.
  2. Fold in vanilla and powdered sugar. Use for filling.
***If using JAMS, PRESERVES OR PUREES
  1. Put the packet of whipped cream stabilizer with the heavy cream before whipping. Whisk until cream is stiff.
  2. Heat up jams or preserves until loose. Cool slightly before folding in the whipped cream.
  3. Use as filling.
Recipe Notes

*Gel paste food colors will give you bright colors if you are doing the decorated swiss rolls. 🙂
