  1. In a pan or wok, put the water, pork and salt. Bring to boil until pork is tender and water has dried out and pork starts rendering fats.
  2. Add oil ,if needed, to help fat rendering. Let the pork brown up a bit.
  3. Once the pork is golden brown, sauté onions and garlic in the same pan with the pork until cooked and fragrant.
  4. Add the tomatoes and bagoong (shrimp paste).
  5. Add the ampalaya. Stir and cover for a while. Once half cooked (3-5 minutes), stir again and season to taste. You may add patis at this point if still using.
  6. Beat the eggs then add to the pan. Stir a bit and cover pan to quickly cook the eggs.
  7. Serve warm with lots of steamed rice. Enjoy!
