Vegetables Lumpiang Sariwa (Meatless Version) Donna Moreno Prev Article Next Article Lumpiang Sariwa (Meatless Version) Print Recipe Lumpiang Sariwa (Meatless Version) Print Recipe Ingredients Main Ingredients 1/2 cup shrimp shelled and deveined 1/2 cup sweet potato cubed 1 cup bean sprouts (touge) 1/2 cup jicama (sinkamas) in thin strips 1/2 cup string beans (baguio beans) sliced diagonally 1/2 sup carrots jullienned 1/4 cup cilantro 3/4 cup extra firm tofu slice into thing strips 4 gloves garlic crushed 1 medium onion sliced 2 tbsp fish sauce 2 tbsp peanut butter Salt to taste cooking oil lettuce leaves Wrapper ingredients 1 cup all purpose flour 1/3 cup tapioca starch (cassava starch) 1/2 tbsp sugar 2 eggs 2 3/4 cups water Sauce ingredients 1 cup brown sugar 4 cups water 2 tbsp soy sauce 1 pork cube A dash Salt 1 head garlic minced 4 tbsp cornstarch/tapioca starch dilute in 1/2 cup water Servings: Instructions Filling Sauté garlic and onion. Add the peeled shrimps. Add the fish sauce, sweet potatoes and jicama. Cook until tender Add the tofu then green beans and carrots. Cook for 4-5 minutes. Add the bean sprouts and cilantro, peanut butter. Add salt to taste. Cook for 3 minutes. Remove from heat. Cool down before wrapping. Soft wrapper Mix all ingredients for wrapper thoroughly. Prepare a non-stick lightly greased pan with oil or bitter. Pour in about 1/3 cup of wrapper mixture in the pan. Distribute the mixture evenly on the pan by tilting it. Cook over low-medium heat for 2 minutes or until the mixture becomes dry. Remove the cooked mixture using a spatula or a small turner. Place the wrapper into a plate. Set aside. Sauce In a saucepan, bring the water to a boil. Add brown sugar, soy sauce, and a dash of salt. Add the diluted cornstarch/tapioca starch. Cook until the sauce becomes thick and glossy. How to wrap Place the wrapper in a plate then place a lettuce leaf in the middle top part of the wrapper. Spoon the filling and place over the the lettuce leaf. Wrap by folding the lower part first then fold the sides until the filling is sealed. Recipe Notes Pour over some sauce over the lumpia and garnish with some peanuts and minced garlic.
