Mango Part
  1. Dissolve the gelatine in the mango juice. Set aside to bloom at least 10 minutes.
  2. After 10 minutes, heat up your gelatine mixture in the microwave until completely dissolved. About 30 secs. Or you could easily do this step on the stove.
  3. Add the gelatine mixture to the mango puree. Stir well to combine.
  4. Pour in your molds or dessert glasses and fill them halfway. You could do a diagonal effect of the panna cotta by tilting the molds a little and setting it against a muffin tin or small bowls to keep them steady. Chill in the fridge for at least an hour.
Cream Panna Cotta
  1. Dissolve the gelatine in 1 cup cream (or milk). Set aside to bloom at least 10 minutes.
  2. After 10 minutes, heat up your gelatine mixture in the microwave until completely dissolved. About 30 secs. Or you could easily do this step on the stove.
  3. Add the gelatine mixture to the remaining cream. Stir well to combine.
  4. Add the vanilla and stir.
  5. Finally, get the chilled mango panna cotta. Pour the cream panna cotta gently on the mango jelly. Place in the fridge to chill and set completely.
  6. Garnish with more diced mangoes on top. Enjoy!
