Try this Mocha Mamon recipe by Marie Tayag of Tsocko Krinkles and tell us what you think. 🙂 MOCHA MAMON Print Recipe by Marie Tayag Servings 12 Servings 12 MOCHA MAMON Print Recipe by Marie Tayag Servings 12 Servings 12 Ingredients 1 cup + 2 tbsps cake flour sifted 1 1/2 tsp baking powder 1/2 tsp Salt 1/2 cup sugar 2 tbsp coffee powder *I use 1 1/2 tsp Espresso 4 eggyolks 1/2 tsp vanilla 1/2 cup vegetable or corn oil 1/2 cup water MERINGUE 4 eggwhites 1 tsp cream of tartar 1/4 cup sugar MOCHA BUTTERCREAM 1/2 cup butter 1 cup confectioners' sugar 1-2 tbsps milk or water 1 tsp coffee 1 cup grated cheese optional Servings: Instructions CAKE Preheat oven at 350F. Line 12 mamon mold. Combine all dry ingredients in a big bowl and make a well at the center. Add wet ingredients. Beat until smooth. In a separate grease free bowl beat egg whites and cream of Tartar. Gradually add sugar. Continue beating until stiff peak forms.. Fold meringue (make it in 3 parts) to eggyolk mixture.. Bake for 15 minutes or until done. Cool. Spread Mocha buttercream and sprinkle with grated cheese. BUTTERCREAM Beat all ingredients together until smooth and creamy. ASSEMBLY Put buttercream on top of cake and sprinkle with cheese. Or simply brush Mocha Mamon with melted butter, sprinkle with sugar and top with cheese.
