  1. Place the water, salt, brown sugar, bread flour and yeast, in the order listed. Mix, knead and let rise for about 1 hour in an oiled bowl. Cover loosely with a damp tea towel or plastic cling wrap.
  2. Once doubled in size. Divide dough into 12 equal pieces. Roll each ball into a thin rope.
  3. Wrap around the hotdogs as shown in the picture.
  4. Cover with plastic and allow pretzels to rest for about 20-30 minutes.
  5. While waiting, Preheat oven to 425F. Boil a pot of water, add the baking soda and stir.
  6. Once pretzels have rested and water comes to a boil, carefully slide one to two pretzel dogs into the boiling water at a time flipping each after 30 secs. When they float on top of the water, it is good to go.
  7. Allow pretzels to drain on a wire cooling rack.
  8. Bake in the oven until dark and golden, approximately 15 minutes.
  9. When pretzels are golden brown, transfer to a wire cooling rack.
